Preserving: Roasted Pumpkin Seeds

Well, I couldn't let all those seeds go to waste, so roasting the seeds was the best option. Those two pumpkin produced 2 cups of seeds. Apart from getting them separated from the pulp, the rest was easy.

1 cup pumpkin seeds
1 Tbsp butter melted
salt to taste

Coat seeds well in butter and salt. Place on cookie sheet. Bake at 350 for 15-20 minutes stirring occasionally. Enjoy!

I got distracted so about half of ours burned. Next time I'll be more diligent. But according to Joseph, "The dark brown ones are the best!"

Note: 1 cup of seeds prepared this way is 1000 calories. Great snack if you are hiking in the wilderness. For the rest of us moderation is the key.

Pumpkin Spice Muffins

Yum!! This is a lower fat muffin with applesauce instead of oil or butter. They bake up extra moist. It's really hard to have just one.

Prep Time: 5 minutes
Bake Time: 20-25 minutes
Yield: 30 muffins
Cost: approx. $2.00


1 small can pumpkin ($.87)
2 cups sugar ($.25)
1 cup applesauce ($.25)
1 cup water
4 eggs ($.25)
3 1/2 cups flour ($.25)
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp pumpkin pie spice
2 tsp cinnamon

Mix together pumpkin, sugar, applesauce, water and egg. Add in dry ingredients and stir. Bake at 350 for 20-25 minutes.

Banana Bran Muffins


I'm trying to come up with a morning snack to keep the kid's brains functioning before lunch. Somehow productivity slows at about 10:30. It needs to be filling, healthy and of little cost. I bought 48 granola bars for about $9.00. I thought that was a good deal, but I've think I've found something better. Here's what we are trying this week.

Prep time: 15 minutes
Bake time: 15 minutes
Yield: 54 muffins
Cost: Approx. $4.00


1 16 oz box bran flakes ($2.00)
2 cups sugar ($.50)
5 cups flour ($.50)
2 tsp salt
5 tsp baking soda
5 tsp cinnamon
4 cups skim milk
4 eggs ($.50)
1/4 cup butter melted ($.25)
2 ripe bananas ($.25)

Mix dry ingredients in a large bowl. Add in wet ingredients. Bake at 400 degrees for 15 minutes.

Microwave Caramel Popcorn

To redeem myself from my utter disaster I fixed the family caramel popcorn. This recipe is great because it's no mess and fast!! There's never enough.

Prep time: 5 minutes
Cook time: 10 minutes
Ready in: 15 minutes
Serves: 8-10
Cost: approx. $3.00

6 quarts of popped popcorn ($2.00)
1 cup brown sugar ($.25)
1/2 cup butter ($.75)
1/4 cup light corn syrup
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon baking soda

1. Place popcorn in large paper sack and set aside.

2. In microwave safe dish place brown sugar, butter, corn syrup, salt and vanilla. Heat 3 minutes. Stir. Heat 1 1/2 minutes. Add baking soda and stir.

3. Pour syrup over the popcorn, seal top of bag by folding over and shake.

4. Place bag in the microwave on its side for 45 seconds. Then turn the bag over and heat and additonal 45 seconds.

5. Spread out to cool or eat it while it's still warm.
