Q&A: What did you do with all that ground beef?

Duckygirl wondered what it is I made with all of that ground beef I purchased in bulk. I bought twenty pounds and split it this way:

5 pounds of raw meat were prepared into 2 meatloafs
5 pounds of raw meat were made into 20 patties for Poor Man's Steak
7 Pounds were cooked and seasoned with homemade Taco Seasoning for 1 Taco Soup, 2 Nachos, and 16 Make Ahead Burritos.
3 pounds were browned for
2 meals of the best chili ever

All this prepared meat resulted into eleven meals for January. I'm sad that my freezer is becoming empty again. Soon it will be time to plan and cook for February. Anyone want to join me?

Thanks for posting this! I make a version of that poor man's steak (I think the only difference is mine adds Worchest. sauce) Yummy!

Monica, I really need to do some freezer cooking. I am getting weary of spending so much time in the kitchen everyday. I'm also coming up short in the grocery budget. I'm hoping Feb. will be better! Did you like the ground beef from Sam's? The ground turkey I've been buying forever has changed in quality (lots of atrange tough chunks, eewww!) and I don't plan to buy more. The leaner ground turkey is over $2 per pound, so I will be checking ground beef prices too.

I'm so glad I found your blog through your comment on mine! I thought I was the only one who did these crazy cooking rampages...apparently not. :) I do it with chicken too. I buy when it is on a killer sale: cook some and chunk it for sandwiches, soups and casseroles; pound some to make large looking cutlets that I freeze raw and cook up in bread crumbs later; the rest I marinate for grilling and we slice it up on salads.
Well, you're in my favorites I'll be following along with your other good ideas and funny stories. :)

I made my list of recipes to cook for this month and I grabbed a cheesy chicken enchilada recipe from somewhere but I didn't write down where. I was thinking I got it here but now I can't find it anywhere. I have all the ingredients but not the instructions! Did I get it from this site? If so how do I find it again? Thanks for all the recipes! My daughter and I made the stuffed shells today.
