Apples Anyone?


Our field trip last week resulted in ALOT of apples. I'm in search of some simple applesauce, apple pie filling or apple butter recipes that you may have that could be stored in the freezer. Do you have any?

We've put up a lot of applesauce in the freezer this year. Do you have a food mill? or know someone you could borrow one from? All I did was cut the apples (a brown grocery sack full)in to chunks in a large pot and boil with a little water (4 cups?) until they were mush then put them through the mill. Added about 1 1/2 cups of sugar and 2 tsp cinnamon, cooled and put into gallon ziplocks. I think this amount yielded about 5 bags. If you don't have a mill you could peel and core then boil and mash with a potato masher.

If you have a food mill, making applesauce is easy...just cut your washed, unpeeled apples into segments (seeds, stems and all)and place them in a crockpot or large pot with a little water or juice in the bottom. I always add a little cinnamon to each batch. It looks like your apples are more of a tart variety, so you may want to add a bit of sugar to each batch. Cook on high until bubbly, then stir and turn down to medium so nothing burns. When everything is soft, run it through the mill. I store mine in ziploc bags in the freezer.

As far as apple butter, I've not made that, but this fall I made 3 bushels of our pears into pear sauce and pear butter. Since they are so similiar, I'm sure you could follow the same recipe for apple butter... here's the link:

You can also use a blender to mush up your cooked apples for applesauce (if you peeled and cored them before cooking.)

I've also frozen plain sliced or chopped apples in the amount needed for pie, apple crisp, muffins, coffeecake, etc. Easy-peasy.

You can also add to the sliced apples your sugar, cinnamon, cornstarch or flour that your favorite pie recipe calls for, mix it up and freeze, in bags or plastic containers.

APPLE PIE Mixture For Canning

4-1/2 Cups Sugar
2 Teaspoons Cinnamon
1 Teaspoon Salt
1 Cup Cornstarch
1/4 Teaspoon Nutmeg
10 Cups Water
3 Tablespoons Lemon Juice
7 Quarts Sliced Apples
Cook the first 6 ingredients until thick, then add the lemon juice. Pour over apples. Place in jars and put in a water bath for 20 minutes

Don't fill completely to the top of the jars or it will bubble out when water bathed.

all i can say is...YUM! oh-and i'm gonna try using my freezer applesauce in place of oil in my baking this year!

What did you end up doing with the apples? I just made sauce today--I cook down the apples--no sugar or anything--and put through my $1 food mill from a garage sale. On Saturday I made the pie filling listed above--BOY was it yummy! My husband told me to freeze it pronto or I'd find him in the kitchen after midnight with his head in the pot licking it clean!
