Pumpkin Spice Muffins

Yum!! This is a lower fat muffin with applesauce instead of oil or butter. They bake up extra moist. It's really hard to have just one.

Prep Time: 5 minutes
Bake Time: 20-25 minutes
Yield: 30 muffins
Cost: approx. $2.00


1 small can pumpkin ($.87)
2 cups sugar ($.25)
1 cup applesauce ($.25)
1 cup water
4 eggs ($.25)
3 1/2 cups flour ($.25)
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp pumpkin pie spice
2 tsp cinnamon

Mix together pumpkin, sugar, applesauce, water and egg. Add in dry ingredients and stir. Bake at 350 for 20-25 minutes.

Do you think applebutter will work the same as applesauce? I have an abundance of applebutter.

Amanda- I think applebutter is a fabulous idea! It already has those great spices, too.

Abby has made these twice now and we love them. I love that they are made without oil! I love this time of year and I love pumpkin...great recipe.

I've made these twice now and we really enjoy them...I will say I added a bit more pumpkin pie spice the second time around. I added chocolate chips to a few this time and OHhhhhhh, were those good!
